Sheet Pan Salmon with Peas, Ginger and Sesame

Ingredients
  

Marinade ingredients

  • 1 tbsp sesame oil
  • 1 tbsp olive oil
  • 1 tsp honey
  • 3 inch fresh ginger grated
  • 3 large garlic cloves minced
  • 1 lime zested and juiced
  • 1/2 tsp celtic salt

2 salmon filets

  • 1-2 cups shelled spring peas
  • 2-3 cups fresh snap peas
  • Sesame seeds to garnish

Instructions
 

  • Preheat oven to 375F and prepare a baking sheet with parchment paper.
  • Prepare marinade by adding oils, honey, fresh ginger, minced garlic, lime and salt into a bowl. Whisk well until well mixed.
  • Add the salmon to one side of the prepared pan and the two types of peas to the other side.
  • Brush the salmon with the marinade liberally until fully covered. Spoon the remaining marinade on the vegetables and give them a quick toss.
  • Bake 12-15 minutes or until the salmon is cooked through. If you have a broiler, broil for 2 minutes at the end to caramelize the salmon.
  • Garnish with sesame seeds and enjoy.
