Ingredients

Marinade ingredients
  • 1 tbsp sesame oil
  • 1 tbsp olive oil
  • 1 tsp honey
  • 3 inch fresh ginger grated
  • 3 large garlic cloves minced
  • 1 lime zested and juiced
  • 1/2 tsp celtic salt
2 salmon filets
  • 1-2 cups shelled spring peas
  • 2-3 cups fresh snap peas
  • Sesame seeds to garnish

Instructions

  1. Preheat oven to 375F and prepare a baking sheet with parchment paper.
  2. Prepare marinade by adding oils, honey, fresh ginger, minced garlic, lime and salt into a bowl. Whisk well until well mixed.
  3. Add the salmon to one side of the prepared pan and the two types of peas to the other side.
  4. Brush the salmon with the marinade liberally until fully covered. Spoon the remaining marinade on the vegetables and give them a quick toss.
  5. Bake 12-15 minutes or until the salmon is cooked through. If you have a broiler, broil for 2 minutes at the end to caramelize the salmon.
  6. Garnish with sesame seeds and enjoy.
