I posted about this recipe on my stories over the weekend and was blown away by how many of you asked me about gooseberries! Gooseberries are small and nutritious type of currant that add good flavor and texture to an otherwise simple salad. The flavor ranges from sour to sweet and they have a texture similar to a blueberry! I picked these up at the local farmer’s market but you should have luck at Whole Foods or any produce-heavy market where you live.

Simple Gooseberry Salad
Ingredients
- 1 bundle kale
- 1 bundle collard greens
- Dill basil and parsley to your liking
- 1/2 cup sprouts
- 6 oz fresh gooseberries cut in halves
- 1 cup toasted sprouted nuts
DRESSING:
- 2 tbsp walnut oil
- 2 tbsp olive oil
- 1 heaping tbsp tahini
- 1/2 lemon juiced
- 1 small whole lime
- salt and pepper to taste
