
Tropical Papaya Boats
Ingredients
- Papaya halved and de-seeded
- 8 oz coconut yogurt
- 1/2 cup gluten free granola
- 1 kiwi chopped
- 1/2 cup pineapple chopped
- Berries of choice
- Unsweetened shredded coconut
Instructions
- Cut the papaya into two and remove the seeds and inside to make a cavity.
- Spoon in the coconut yogurt until even and full.
- Arrange the granola, kiwi, pineapple, and berries. Finish with shredded coconut.
