Prepare flour mixture by adding all ingredients to a bowl and combining.
Whisk two eggs with a tablespoon of water until smooth.
Remove the tendon of each chicken piece and cut into smaller tender shapes. Dip them into the egg wash and coat evenly, then into the flour mixture and cover completely. Dip back into egg wash and back into the flour mixture, then place in basket of air fryer.
Cook in air fryer at 400 for 15 minutes. Serve warm with desired dipping sauce (I used bitchin’ sauce but also love an organic, no sugar added ketchup)
If you don’t have an air fryer, I’d put it in a baking dish at 400F in the oven for around 15 minutes.
