Blue Zone Chicken Salad
This recipe has been on repeat in my kitchen for spring! This refreshing salad is delicious and keeps you living longer! Sardinia in Italy is one of the world’s five blue zones, an area where a large number of people live to 100 or longer. This salad is inspired by the ingredients most popular in this region, like purple sweet potatoes, olive oil, and hazelnuts.
Ingredients
1 onion, diced
1 large purple sweet potato, cubed
8-10 Brussels sprouts, chopped thin
Salt and pepper to taste
1 tsp Dried basil
1/2 tsp Dried parsley
1/2 tsp dill
4 tbsp olive oil
4-5 chicken breasts, pulled apart
1 tbsp oregano
1/2 tbsp turmeric
1 tsp Thyme
1 tsp Rosemary
Cayenne pepper to taste
1 lemon, juiced
1/2 lemon, zest
1 Pink radicchio, chopped
4 cups spinach, chopped
1/2 cup toasted hazelnuts, chopped
Dressing
1 avocado
1 large lemon
1/4 cup oil
5 tbsp olive oil
Handful of parsley
1 tbsp honey
1 tsp mustard
Blend
Instructions
1. Cook onion on medium heat until translucent.
2. Add purple potatoes, brussel sprouts, dill, basil, parsley, salt and pepper and cook for 10-13 minutes.
3. Preheat oven to 350.
4. Layer chicken on parchment paper and add cayenne pepper, lemon, lemon zest, oregano, turmeric, thyme, and rosemary. Cover in olive oil and add salt and pepper to taste. Bake chicken for 20 minutes.
5. While the chicken cooks, chop lettuce and radicchio.
6. Combine dressing ingredients and mix in a blender.
7. Remove the chicken from the oven and use a fork to pull it apart. Chop hazelnuts.
8. Combine dressing and all ingredients and mix well!
