  • 1 wild-caught Arctic char (or salmon or trout)
  • 1–2 teaspoons ghee
  • Mineral salt, to taste
  • Freshly ground black pepper, to taste
Matcha Dill Herb Sauce
  • 2 tablespoons Shayna’s Kitchen Olive Oil
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon fresh dill, finely chopped
  • Juice of ½ lemon
  • ½ teaspoon Shayna’s Kitchen matcha, sifted
  • Mineral salt, to taste
Instructions
  1. Prepare the fish: Pat the fish dry with a paper towel. Season both sides with mineral salt and freshly ground black pepper.
  1. Heat the pan: Place a skillet over medium-high heat. Once hot, add the ghee and allow it to melt.
  1. Sear the fish: Place the fish in the pan skin-side down. Cook for about 4–5 minutes, allowing the skin to become crispy and golden.
  1. Flip and finish cooking: Flip the fish and cook for another 3–4 minutes, depending on how well done you prefer your fish.
  1. Make the sauce: While the fish cooks, whisk together:
  • olive oil
  • parsley
  • dill
  • lemon juice
  • sifted matcha
  • a pinch of mineral salt
  • Mix until smooth and vibrant green
  1. Assemble: Place a handful of broccoli sprouts on a plate. Lay the crispy fish on top and drizzle generously with the matcha dill herb sauce.
