- 1 wild-caught Arctic char (or salmon or trout)
- 1–2 teaspoons ghee
- Mineral salt, to taste
- Freshly ground black pepper, to taste
Matcha Dill Herb Sauce
- 2 tablespoons Shayna’s Kitchen Olive Oil
- 2 tablespoons fresh parsley, finely chopped
- 1 tablespoon fresh dill, finely chopped
- Juice of ½ lemon
- ½ teaspoon Shayna’s Kitchen matcha, sifted
- Mineral salt, to taste
Instructions
- Prepare the fish: Pat the fish dry with a paper towel. Season both sides with mineral salt and freshly ground black pepper.
- Heat the pan: Place a skillet over medium-high heat. Once hot, add the ghee and allow it to melt.
- Sear the fish: Place the fish in the pan skin-side down. Cook for about 4–5 minutes, allowing the skin to become crispy and golden.
- Flip and finish cooking: Flip the fish and cook for another 3–4 minutes, depending on how well done you prefer your fish.
- Make the sauce: While the fish cooks, whisk together:
- olive oil
- parsley
- dill
- lemon juice
- sifted matcha
- a pinch of mineral salt
- Mix until smooth and vibrant green
- Assemble: Place a handful of broccoli sprouts on a plate. Lay the crispy fish on top and drizzle generously with the matcha dill herb sauce.
