Here’s what you’ll need:
Serves 2!
Smoothie:
- 1 large organic cucumber
- 1 cup organic lettuce
- 1 organic grapefruit, peeled and chopped
- 1 organic lime, peeled and chopped
- 1 organic kiwi, peeled and chopped
- 1 cup brewed dandelion tea
- Ice
Toastie:
- 2 pieces organic rye toast
- 2 tbsps per slice of organic bean dip
- 1 1/2 cup organic leafy greens
- 4 organic eggs
- 2 heaping tbsp kimchi
- Drizzle with olive oil
Step-by-step:
- Begin by chopping organic cucumber, grapefruit, lime, and kiwi, and place them in a blender along with 1 cup of organic lettuce.
- Pour in 1 cup of dandelion tea and blend until smooth. Set aside.
- Toast 2 slices of organic rye bread in a toaster until golden brown, then transfer to a plate.
- Generously spread organic bean dip on the toasted bread, then layer with leafy greens, eggs, and kimchi.
- Finish by drizzling with a touch of olive oil for added richness.
