Harvest Quinoa and Pumpkin Soup

This season is all about warmth, connection, and creating beautiful memories, and I’ve found so much comfort in this amazing warming harvest quinoa and pumpkin soup There’s something magical about gathering around the kitchen table, sharing a nourishing meal, and savoring those precious moments with the people who matter most. This soup has become a favorite in my home—a dish filled with all the cozy vibes we crave during this time of year.
Here’s what you’ll need:
1 heaping tbsp Shayna’s Kitchen Ancient Olive Oil
1 cup organic red onion, diced
1/2 cup organic celery, diced
1/3 cup organic carrot, diced
1 cup organic pumpkin, cubed
1 heaping tbsp organic garlic, minced
1 heaping tbsp organic parsley, minced
1 tbsp Dried thyme, rosemary and sage
4 – 6 cups homemade bone broth
1 cup organic white quinoa
2 cup organic kale, sliced
1 heaping cup organic cannellini beans
Pinch of salt and pepper
Optional: Top with olive oil and parmesan cheese
Step-by-step:
1. Heat 1 heaping tbsp Shayna’s Kitchen Ancient Olive Oil in a large pot over medium heat. Add the diced red onion, celery, and carrot. Sauté for 3-4 minutes, stirring occasionally, until the vegetables soften and become fragrant.
2. Stir in the cubed pumpkin, diced garlic, diced parsley, and dried herbs, cooking for another 2-3 minutes until the garlic releases its aroma.
3. Pour in 4 cups of homemade bone broth and bring the mixture to a gentle boil.
4. Once boiling, reduce the heat to a simmer. Add 1 heaping cup cannellini beans, and 1 cup of organic white quinoa and cook for about 15 minutes, stirring occasionally, until the quinoa is tender.
5. Stir in the sliced kale letting it wilt into the soup for about 2-3 minutes.
6. Add a pinch of salt and pepper. Adjust seasoning as needed.
7. Ladle the soup into bowls and, if desired, drizzle with a touch of olive oil and sprinkle with parmesan cheese for added flavor.
