There are few dishes more satisfying than an open-faced bagel sandwich. And today’s recipe gets an update with a Mediterranean flair. A gluten-free everything bagel gets smeared with delicious hummus and avocado and is then topped with fried eggs, sprouts, sun-dried tomatoes, and kalamata olives. Some cold-pressed olive oil drizzled on top and you’ve got yourself one satisfying and easy lunch! Enjoy.
Healthy Mediterranean Bagel Sandwich

Ingredients
- 1 gluten free everything bagel sliced
- 3 tbsp hummus of choice
- 2 eggs fried
- 1/2 avocado mashed
- Handful of sprouts
- Sun-dried tomatoes
- Sliced kalamata olives
- Organic cold pressed olive oil
- Salt and pepper to taste
Instructions
- Cut the bagel open and toast.
- Over medium heat, add 1 tbsp of olive oil to a pan and fry two eggs until cooked to your liking.
- Spread the hummus on the toasted bagel, add mashed avocado and the fried eggs. Top with sprouts, sundried tomatoes, kalamata olives and salt and pepper. Finish with a drizzle of olive oil.
