There are few dishes more satisfying than an open-faced bagel sandwich. And today’s recipe gets an update with a Mediterranean flair. A gluten-free everything bagel gets smeared with delicious hummus and avocado and is then topped with fried eggs, sprouts, sun-dried tomatoes, and kalamata olives. Some cold-pressed olive oil drizzled on top and you’ve got yourself one satisfying and easy lunch! Enjoy.

  • 1 gluten free everything bagel sliced
  • 3 tbsp hummus of choice
  • 2 eggs fried
  • 1/2 avocado mashed
  • Handful of sprouts
  • Sun-dried tomatoes
  • Sliced kalamata olives
  • Organic cold pressed olive oil
  • Salt and pepper to taste


  1. Cut the bagel open and toast.
  2. Over medium heat, add 1 tbsp of olive oil to a pan and fry two eggs until cooked to your liking.
  3. Spread the hummus on the toasted bagel, add mashed avocado and the fried eggs. Top with sprouts, sundried tomatoes, kalamata olives and salt and pepper. Finish with a drizzle of olive oil.
