Italian Beef Meatballs with Tomato Sauce

INGREDIENTS
½ cup almond milk
1 large onion
1/2 cup GF bread crumbs
2 eggs (I use extra-large.)
1 cup freshly grated Romano cheese
4 garlic cloves
2 tablespoons chopped fresh parsley
1 ½ teaspoons black pepper
1 ½ teaspoons salt
2 pounds 85% lean ground beef (Preferably grass-fed & organic)
For Frying the Meatballs:
¼ cup ghee or avocado oil (plus extra if needed to fry the second batch)
3 quarts Tomato Sauce
INSTRUCTIONS
- In a large mixing bowl, combine meat, eggs, garlic, herbs, and salt. Mix well. Add breadcrumbs and continue mixing.
- Finally, add the milk and mix until well combined. (The mixture should have a thick consistency.)
- Form the mixture into medium to small meatballs and set aside.
- Heat a cast-iron skillet pan with ghee. Sauté the onions until translucent. Add the meatballs and brown on each side.
- Once the meatballs are golden brown, add your tomato sauce, salt, and pepper. Cover and let it simmer for 20 minutes, coating the meatballs in the sauce. Stir occasionally without breaking up the meatballs.
- Once done, serve hot with fresh toasted bread or veggies on the side!
