  • 1 cup white rice
  • 1/2 white onion
  • 3 medium tomatoes
  • 2 cups water or vegetable broth
  • 1 1/2 tsp celtic salt
  • 1/2 tsp cumin
  • 1/3 cup olive oil
  • 1-2 jalapeno peppers seeded and minced
  • 4-5 cloves of garlic minced
  • Juice of 2 limes


  1. Toast your rice over medium low heat.
  2. Place tomatoes and onion in a blender with 1 cup of water and blend until smooth.
  3. Then, add a drizzle of oil to the bottom of a skillet, heating up the jalapeño, cumin, salt and minced garlic.
  4. Stir in your toasted rice.
  5. Add in 1 cup of the tomato mixture and the remaining 1 cup of water. Add in the olive oil.
  6. Cover and cook until liquid is absorbed and the rice softens, about 15 minutes. Remove from heat and fluff the rice with a fork. Cover and let steam for 10 minutes. Add in the juice of the limes and season with additional salt and a drizzle of oil if necessary.
