This is sunshine in a bottle, my go-to elixir when peaches are at their juicy peak and the summer days feel endless. The sweetness of ripe peaches meets the subtle heat of fresh ginger, balanced by a hint of rice vinegar and Dijon for a zing that wakes up any dish. I love it drizzled over peppery arugula, grilled halloumi, or tossed into a fresh grain bowl with mint and almonds. It’s refreshing, unexpected, and totally addictive—just like a perfect summer afternoon.

1 large ripe peach (or 2 small), peeled and chopped (about ¾ cup)

Instructions

In a blender or food processor, combine the chopped peach, grated ginger, rice vinegar, honey, and Dijon mustard.
