This is sunshine in a bottle, my go-to elixir when peaches are at their juicy peak and the summer days feel endless. The sweetness of ripe peaches meets the subtle heat of fresh ginger, balanced by a hint of rice vinegar and Dijon for a zing that wakes up any dish. I love it drizzled over peppery arugula, grilled halloumi, or tossed into a fresh grain bowl with mint and almonds. It’s refreshing, unexpected, and totally addictive—just like a perfect summer afternoon.

Ingredients

  • 1 large ripe peach (or 2 small), peeled and chopped (about ¾ cup)

  • 1 teaspoon freshly grated ginger

  • 2 tablespoons rice vinegar

  • 1 tablespoon honey (or maple syrup for vegan option)

  • 1 teaspoon Dijon mustard

  • 3 tablespoons olive oil

  • Pinch of salt (optional)

Instructions

  1. In a blender or food processor, combine the chopped peach, grated ginger, rice vinegar, honey, and Dijon mustard.

  2. Blend until smooth and creamy.

  3. With the motor running (or while whisking), slowly stream in the olive oil until fully emulsified.

  4. Taste and adjust—add more ginger for extra zing, or a touch more honey if your peaches are tart.

  5. Serve immediately or refrigerate for up to 3 days. Shake or stir before using.
