Christmas Matcha Tree Butter Cookies

Ingredients
1 cup butter, softened
1/2 Rice flour
1 cup almond flour
1/3 cup tapioca flour
1/2 cup coconut sugar
1 tbsp morning ritual matcha powder
Pinch of Celtic salt
1 tsp vanilla extract
1 egg
For the salted maple frosting
½ cup powdered sugar
1 tablespoon pure maple syrup
1/2 teaspoon vanilla extract
1 tablespoon melted butter
1/2 tablespoon unsweetened almond milk, plus 1-2 teaspoons more to thin if necessary
Pinch of sea salt, to taste
Instructions
- Preheat oven to 350°
- In a bowl, add the dry ingredients in whisk to blend
- In a smaller bowl, add the butter and eggs and whip well.
- Pour the wet ingredients into the dry ingredients and mix well.
- Take a pastry bag and a star tip. Cut the tip of the bag and insert the tip.
- Fill the pastry bag with the butter cookie dough and set aside.
- Place a piece of parchment paper onto a cookie sheet. Starting with the tip of the tree being small, making it fatter towards the end, shaping each Christmas tree.
- Add your pecans at the bottom of the trunk of the tree
- Bake the cookies for 8 to 10 minutes.
- While cookies are baking, make glaze.
- Drizzle them with glaze (optional)
