Easy Summer Zucchini Snack

I shared about the benefits of zucchini to my feed last week. One of my biggest passions is gardening and I am so happy to say that I grew these zucchinis in my very own garden! I wanted to share this easy and delicious snack as zucchini is one of my favorite summer fruits (yep, botanically, they’re considered a fruit, even though prepared usually as a savory dish!) You can use whatever you’d like or have on hand but I really love the flavor of zucchini!
Easy Summer Zucchini Snack
Ingredients
- 2 zucchinis sliced
- 2 tbsp extra virgin olive oil
- 1/2 lemon juiced
- Pine nuts
- Salt and pepper to taste
Instructions
- Toast your pine nuts. You can either do it on a stove top or in the oven. For the oven, preheat to 375 F. Spread the pine nuts in a single layer on a rimmed baking sheet. Bake for 5-10 minutes or until golden brown, stirring around every 2 minutes. If you prefer to toast them on a stove top, place them in a large frying pan (don’t add oil!). Cook until golden brown, stirring frequently. They should start becoming more fragrant. When toasted, transfer to plate to stop the cooking process.
- Slice up your desired vegetable. I used zucchini for this snack!
- Drizzle the veggies with olive oil, freshly squeezed lemon juiced, and salt and pepper. Sprinkle with toasted pine nuts and enjoy!
