Homemade Purple Potato Salad
Ingredients
For the potato salad:
- 2 lbs purple potatoes
- 2 celery stalks diced
- 1/4 cup chopped parsley
- 1/4 cup chopped tarragon
- 1/4 cup chopped dill
- 2 stalks green onion chopped and separated (white and green parts)
For the dressing:
- 1 cup mayonnaise
- 1/4 cup Dijon mustard
- 1 tsp celery seed
- 1 teaspoon cayenne
- 1 tbsp vinegar apple cider or any light vinegar
- 4 small cloves garlic
- 1 lemon juiced
- Salt and pepper to taste
Instructions
- Boil potatoes until tender, about 20 minutes. Do not overcook or they will get mushy.
- Drain potatoes from water, and rinse with cold water and let cool slightly.
- Cube the boiled potatoes into bite sized pieces.
- Add the cubed potatoes to a large mixing bowl. Add in celery, chopped herbs and the white part of the green onion. Mix well.
- In a small bowl, add together the dressing ingredients and whisk until combined.
- Drizzle the dressing over the potatoes and stir to mix. Top with the chopped green part of the green onion. Chill until ready to serve.
