Pasta al Limone: Gluten and Dairy Free!
Ingredients
- 6 oz gluten-free spaghetti noodles use more if cooking for more!
- 3 tbsp ghee
- 1 lemon with one half sliced thinly and the other half juiced
- 3-4 cloves of garlic minced
- 5-6 leaves of basil sliced thinly
- 1 small handful parsley minced
- crushed red pepper flakes to taste
- Salt and pepper to taste
Instructions
- Boil a large pot of water and prepare noodles according to package directions.
- In the meantime, make the sauce. Add the ghee to a pan and the lemon slices. Add in the garlic, salt, pepper, and red pepper flakes. Stir around until the lemons start to caramelize.
- Add in half of each the basil and parsley. Sauté for another minute or two.
- Once the lemons have caramelized, add in the juice of the other half.
- Once the pasta noodles are finished cooking, drain and add the cooked pasta to the pan with the sauce, stirring to coat the noodles well.
- To plate, add the pasta and noodles and finish with the remaining amounts of parsley, basil and some fresh lemon zest.
