Protein Packed Vegan Pantry Pasta
Ever get home and realize you don’t have any groceries in the fridge? Not to worry, this vegan protein-packed pasta made with all pantry staples is just for you! A quick and easy meal that will satisfy your tummy and leave your body full of nutrients for fuel.
Ingredients- Serves 2
3 cups pasta
1/2 onion (optional), diced
3 cloves garlic, diced
1 cup sun-dried tomato
1 cup artichokes in oil, chopped
1 jar white beans
1 cup chickpeas
2 tbsp olive oil
1 teaspoon dried basil
1 teaspoon parsley
1 teaspoon thyme
1 teaspoon oregano
Cayenne pepper, to taste
Salt and pepper, to taste
Instructions
1. Get water to boil. Once boiling, add in pasta until aldente.
2. Rinse beans and chickpeas and set aside.
3. Add onions and garlic to pan to simmer with olive oil on medium-high heat until translucent.
4. Add in sun-dried tomatoes and simmer for 3 minutes. Add in artichokes and simmer for another 3 minutes. Add salt and pepper.
5. Add in chickpeas and white beans. Add basil, parsley, thyme, oregano and stir for 5 minutes.
6. Add in pasta. Add in cayenne pepper. Stir and serve!
