Sheet Pan Salmon with Peas, Ginger and Sesame
Ingredients
Marinade ingredients
- 1 tbsp sesame oil
- 1 tbsp olive oil
- 1 tsp honey
- 3 inch fresh ginger grated
- 3 large garlic cloves minced
- 1 lime zested and juiced
- 1/2 tsp celtic salt
2 salmon filets
- 1-2 cups shelled spring peas
- 2-3 cups fresh snap peas
- Sesame seeds to garnish
Instructions
- Preheat oven to 375F and prepare a baking sheet with parchment paper.
- Prepare marinade by adding oils, honey, fresh ginger, minced garlic, lime and salt into a bowl. Whisk well until well mixed.
- Add the salmon to one side of the prepared pan and the two types of peas to the other side.
- Brush the salmon with the marinade liberally until fully covered. Spoon the remaining marinade on the vegetables and give them a quick toss.
- Bake 12-15 minutes or until the salmon is cooked through. If you have a broiler, broil for 2 minutes at the end to caramelize the salmon.
- Garnish with sesame seeds and enjoy.
