SK Pantry Pasta Salad
Tired after a long day and looking for a quick and simply meal made of pantry staples?
Look no further this recipe is for you! Done in about 20 minutes and filling dose of protein, carbs,and healthy fats. Our SK take on traditional pasta salad.
Ingredients, serves 3
2 bunches of lettuce, chopped
2 large sweet potatoes, diced
1/2 cup sundried tomatoes in oil
1 can butter beans
1 1/3 cup Farro fuelini
1/4 cup Pumpkin seeds
1/4 cup pine nutes
Dressing
1 lemon, juiced
1 tsp acv
1/4th cup olive oil
Salt & pepper to taste
1 tbsp coconut sugar or maple syrup
Pinch cayenne pepper
1/2 tsp dill
Instructions
1. Chop sweet potato, dice lettuce and put pasta water to boil.
2. Place pasta to boil. Place sweet potato to sear on medium high heat and pumpkin seeds and pine nuts to toast on medium low heat in separate pan.
3. As the pasta and sweet potato cooks, combine ingredients for dressing.
4. Place butter beans to simmer for 2 minutes.
5. Strain pasta and assemble salad in separate bowl.
6. Combine lettuce, pasta, sweet potato, butter beans, sundried tomatoes and seeds/nuts.
7. Mix in dressing, toss and serve.
