Sweet Potato Spicy Bean Dip

INGREDIENTS
2 cups of sweet potato
One head of garlic
Olive oil and salt
1 15-ounce can of cannellini beans, mostly drained
Juice from one lemon
1/4 cup olive oil (more as needed for blending)
2 tablespoons maple syrup
1 1/2 teaspoons salt
1 teaspoon smoked paprika
1 teaspoon cumin
Half a teaspoon cinnamon
A teaspoon of cayenne (adjust to your spice preference)
Pepper to taste
For garnish (optional): more olive oil, fried sage, and pomegranate seeds
INSTRUCTIONS
- Preheat oven to 400°F. Slice the top off of the garlic, exposing the cloves. Drizzle olive oil over the potato and garlic, and season with a little salt.
- Roast for 30 to 35 minutes, until tender.
- In a blender or food processor, combine all ingredients and blend until completely smooth.
- Top with your favorite garnishes and serve with bread or as a side dish for any main.
