Vegan, Raw Summer Gazpacho

Some days it’s just too hot to cook in the kitchen. Enter: my summer gazpacho recipe. I recognize that gazpacho can be SO hit or miss for many of us but truly believe that this recipe would be loved by most. This gazpacho is also a great detoxifying recipe, perfect for the end of a long summer weekend!
Vegan, Raw Summer Gazpacho
Ingredients
- 2 large zucchinis
- 1 head of broccoli large stem removed
- 1 large bunch of spinach
- 5 large basil leaves
- 1 sprig of dill
- 1 sprig of mint
- 1 large lemon juiced
- 1 lime juiced
- 1/8 of an onion
- 1/8 tsp garlic powder
- 1 tsp herbs de provence
- 1.5 cups vegetable broth homemade
- 1/4 cup almond milk
- 1/4 cup toasted pine nuts
- Salt and pepper to taste
- Pinch of cayenne
Instructions
- Add all ingredients to a high powered blender. Add liquid as needed until blended fully and liquified.
- Transfer to a bowl and drizzle with olive oil for garnish.
