Dijon and Dill Broiled Salmon

Ingredients
  

  • 3 lb salmon I’m serving 4-5 guests so this might change for you!
  • 2 tbsp walnut oil
  • Salt and pepper

Sauce

  • 3 tbsp walnut oil
  • 3 tbsp olive oil
  • 1 heaping tbsp whole grain mustard
  • 1 heaping tbsp dijon mustard
  • 2 lemons juiced
  • 1 large handfuls fresh dill chopped
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to broil and move rack to highest shelf. The trick is to make sure that the rack is the highest in the oven. Line a pan with foil in preparation.
  • Place your salmon piece skin side down and brush with a high-heat oil, like walnut oil. Sprinkle with salt and pepper and broil for 6-8 minutes.
  • In the meantime, prepare the sauce.
  • After the 6-8 minutes, pull out the salmon, brush on the sauce and place back into the broiler for an additional 3-4 minutes, depending on how well done you like your fish.
  • I plated mine on a bed of fresh micro greens and sprinkled with salt when finished, adding lemon as a garnish. Enjoy!
