Ingredients

  • 3 lb salmon I’m serving 4-5 guests so this might change for you!
  • 2 tbsp walnut oil
  • Salt and pepper
Sauce
  • 3 tbsp walnut oil
  • 3 tbsp olive oil
  • 1 heaping tbsp whole grain mustard
  • 1 heaping tbsp dijon mustard
  • 2 lemons juiced
  • 1 large handfuls fresh dill chopped
  • Salt and pepper to taste

Instructions

  1. Preheat oven to broil and move rack to highest shelf. The trick is to make sure that the rack is the highest in the oven. Line a pan with foil in preparation.
  2. Place your salmon piece skin side down and brush with a high-heat oil, like walnut oil. Sprinkle with salt and pepper and broil for 6-8 minutes.
  3. In the meantime, prepare the sauce.
  4. After the 6-8 minutes, pull out the salmon, brush on the sauce and place back into the broiler for an additional 3-4 minutes, depending on how well done you like your fish.
  5. I plated mine on a bed of fresh micro greens and sprinkled with salt when finished, adding lemon as a garnish. Enjoy!
