Healthy Mediterranean Bagel Sandwich

There are few dishes more satisfying than an open-faced bagel sandwich. And today’s recipe gets an update with a Mediterranean flair. A gluten-free everything bagel gets smeared with delicious hummus and avocado and is then topped with fried eggs, sprouts, sun-dried tomatoes, and kalamata olives. Some cold-pressed olive oil drizzled on top and you’ve got yourself one satisfying and easy lunch! Enjoy.

A gluten-free everything bagel gets smeared with delicious hummus and avocado and is then topped with fried eggs, sprouts, sun-dried tomatoes, and kalamata olives. Some cold-pressed olive oil drizzled on top and you’ve got yourself one satisfying and easy lunch! Enjoy. 

Ingredients
  

  • 1 gluten free everything bagel sliced
  • 3 tbsp hummus of choice
  • 2 eggs fried
  • 1/2 avocado mashed
  • Handful of sprouts
  • Sun-dried tomatoes
  • Sliced kalamata olives
  • Organic cold pressed olive oil
  • Salt and pepper to taste

Instructions
 

  • Cut the bagel open and toast.
  • Over medium heat, add 1 tbsp of olive oil to a pan and fry two eggs until cooked to your liking.
  • Spread the hummus on the toasted bagel, add mashed avocado and the fried eggs. Top with sprouts, sundried tomatoes, kalamata olives and salt and pepper. Finish with a drizzle of olive oil.
