Healthy Rice Pudding – GF & Vegan

I’ve never been much of a sweet tooth person. I love dark chocolate or any treat that has honey in it instead of any refined sugar. Even when I was a kid, rice pudding was my favorite dessert! Here is a much healthier version to make yourself at home 🙂 You should even try and make it for your kids as a healthy dessert. 

Healthy Gluten Free Rice Pudding Recipe 

Ingredients

  • 1 cup cooked white basmati rice
  • 1 1/4 cup homemade almond milk
  • 1 tsp pure alcohol-free vanilla extra 
  • 2 tbsp raisins or goji berries 
  • 10 soaked almonds, ground in a coffee grinder or blender, or 1 tbsp almond flour.
  • 1/4 tsp ground cardamom
  • 1 tsp freshly grated ginger root
  • a pinch of saffron thread
  • 1 tsp or tablespoon raw honey, maple syrup, agave – optional 
  • 1 tsp organic ground cinnamon 

Directions

  1. Warm rice, almond milk, and vanilla extract together in a small pot over medium heat. Add the raisins, ground almonds or almond flour, cardamom, grated ginger, and saffron thread, if using. Partially cover the pot with the lid slightly ajar, and simmer on low heat for 15 min.
  2. To serve, divide between 2 bowls. Stir 1/2 teaspoon natural sweetener into each serving if desired.
