Ingredients

Ingredients for the pears:
  • 2 large Bosc pears peeled
  • 1 1- inch piece of fresh ginger peeled and grated
  • 2 tbsp honey
  • 1 cinnamon stick or 1.5 tsp ground cinnamon
  • 1 dash ground clove
  • 2 tsp alcohol free vanilla extract
Ingredients to serve:
  • Plain unsweetened coconut yogurt (or greek yogurt)
  • Gf granola I used the brand Paleonola
  • Pomegranate Seeds
  • Fresh grated ginger
  • Ground cinnamon

Instructions

  1. In a large pot, add about 3 cups of filtered water or enough to cover the pears. Grate the ginger into the pot, add the clove, and cinnamon stick. Bring to a low boil.
  2. Add the honey and vanilla and the 2 peeled pears. Bring temperature to simmer and simmer the pears until cooked through, about 25-30 minutes. Remove from heat and allow pears to cool slightly.
  3. To a plate, spread yogurt on the base. Top with granola. Add the poached pears, sitting upright. Finish with pomegranate seeds and a sprinkle of cinnamon.
