Using a knife, cut a small hole in the center of your bread slice.
In a small nonstick pan, drizzle a bit of olive oil and place bread slice. Lightly toast both sides. Add the circular middle piece of the bread and toast both sides.
Add the pesto to the hole, moving it a bit around to spread the pesto across the bottom of the bread. Crack egg into the hole in the bread. Sprinkle salt and pepper on the egg. Place lid back on pan.
Cook for 3 minutes, flip and cook for one minute more for an over-easy egg. You can cook for longer if you desire to a less runny yolk.
