This Butternut Squash and Radicchio Salad is the perfect combination of sweet, savory, and slightly bitter flavors. The tender and lightly caramelized butternut squash pairs perfectly with the slightly bitter and wilted radicchio. To top it all off, I’ve created a simple tahini lemmon dressing that brings all of the flavors together in one delicious bite. Butternut Squash and Radicchio Salad
Ingredients
- 2 cups butternut squash peeled and diced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon cinnamon
- 2 cups radicchio chopped
- Salt and pepper to taste
- 2 cups greens of choice
Salad Dressing
- 4 tbsp olive oil
- 2 tbsp tahini
- 1 lemon juiced
- 2 tsp sumac
- 2 tsp honey
- Salt and pepper to taste
Instructions
- Preheat a large skillet over medium heat.
- Add the diced butternut squash to the skillet and drizzle with olive oil. Season with salt and cinnamon. Cook for 10-12 minutes, stirring occasionally, until the squash is tender and lightly browned.
- Add the chopped radicchio to the same skillet and cook for 2-3 minutes, or until wilted.
- In a small bowl, whisk together the dressing ingredients. Season with salt and pepper.
- In a large bowl, add the greens of choice and the cooked butternut squash and radicchio. Pour the dressing over the top and toss to combine.
