Ingredients

For the cauliflower:
  • 1 large head of cauliflower
  • 3/4 cup all purpose gluten free flour
  • 1 cup water
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1/4 tsp salt
  • 1 tbsp ghee or vegan butter if you prefer
  • 1 tbsp organic local honey
To prepare hot sauce:
  • 1 large handful of your favorite dried peppers. I used Yamatsu Tsujita Hawk’s Claw Peppers, but dried habanero, chipotle, anchos, etc. works too!
  • 1/2 cup apple cider vinegar
  • 3 whole garlic cloves
  • 1 tsp garlic powder
  • 1/4 habanero pepper seeded
  • 1/2 serrano pepper seeded
  • 1/2 jalapeño pepper seeded
For the chicken wings:
  • 3 lbs chicken wings split with tips removed
  • 2 tbsp ghee melted
  • 2 tsp celtic salt
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp pepper

Instructions

  1. Preheat the oven to 450 F. Line your baking sheet with parchment paper.
  2. Clean and cut cauliflower head into smaller pieces
  3. Whisk together water, flour, ghee, honey and seasonings in a large bowl.
  4. Place the cauliflower pieces into the batter and toss well.
  5. Arrange battered cauliflower onto a baking sheet and bake for 15 minutes.
  6. Flip them over and bake for another 10 minutes.
  7. Toss with hot sauce and bake for an additional 10 minutes or until golden brown.
