Warm rice, almond milk, and vanilla extract together in a small pot over medium heat. Add the raisins, ground almonds or almond flour, cardamom, grated ginger, and saffron thread, if using. Partially cover the pot with the lid slightly ajar, and simmer on low heat for 15 min.
To serve, divide between 2 bowls. Stir 1/2 teaspoon natural sweetener into each serving if desired.
