Honey and Ginger Poached Pear with Coconut Yogurt, Granola and Pomegranate
Ingredients
Ingredients for the pears:
- 2 large Bosc pears peeled
- 1 1- inch piece of fresh ginger peeled and grated
- 2 tbsp honey
- 1 cinnamon stick or 1.5 tsp ground cinnamon
- 1 dash ground clove
- 2 tsp alcohol free vanilla extract
Ingredients to serve:
- Plain unsweetened coconut yogurt (or greek yogurt)
- Gf granola I used the brand Paleonola
- Pomegranate Seeds
- Fresh grated ginger
- Ground cinnamon
Instructions
- In a large pot, add about 3 cups of filtered water or enough to cover the pears. Grate the ginger into the pot, add the clove, and cinnamon stick. Bring to a low boil.
- Add the honey and vanilla and the 2 peeled pears. Bring temperature to simmer and simmer the pears until cooked through, about 25-30 minutes. Remove from heat and allow pears to cool slightly.
- To a plate, spread yogurt on the base. Top with granola. Add the poached pears, sitting upright. Finish with pomegranate seeds and a sprinkle of cinnamon.
