Matcha Rice Krispies

There’s something so special about warm summer nights in the Italian countryside, surrounded by nature. As I soak in these moments, I’m reminded of my childhood, and the simple joys that make life so special. One of my favorite childhood snacks growing up was Rice Krispies, and I wanted to create a healthier version Romeo and I could enjoy together. It’s amazing how the love and care we put into our food can nourish not just our bodies, but our spirits as well.
Here’s what you’ll need:
- 6 tbsps grass fed, organic butter
- 1/4 cup organic black sesame seeds
- 10 – 12 oz. bag natural sweetened marshmallows or homemade marshmallows
- 1 pinch salt
- 1 bag (6 cups) organic rice krispie cereal
- 1 cup organic white chocolate
- 1 tbsp coconut oil
- 1 1/4 tsp organic toasted sesame oil, plus more for greasing the pan
- 2 tsp Morning Ritual Matcha
Step-by-step:
- Melt 6 tbsps of grass fed, organic butter in a pan over medium heat.
- Add 1/4 cup organic black sesame seeds, mix, and let sizzle for 30 seconds before adding one bag of naturally sweetened marshmallows.
- Add a pinch of salt and continue stirring the marshmallows until they are completely liquified.
- Once the marshmallows are melted, add 1 1/4 organic toasted sesame oil and organic rice krispie cereal to pan and mix until thoroughly combined.
- Coat pan with organic toasted sesame oil, press the mixture into a pan lined with baking paper for easy removal and let it cool in the fridge for 30 minutes to 1 hour.
- In a small pan, heat water. Place a bowl on top to create a double boiler and add organic white chocolate to the bowl to melt. Add one tablespoon of organic extra virgin coconut oil and stir until the white chocolate is completely melted.
- Add 2 teaspoons of Morning Ritual Matcha to the melted white chocolate and mix thoroughly.
- Spread the matcha white chocolate evenly over the cooled rice krispie mixture.
- Allow the topping to set, then cut into squares, serve, and enjoy!
