One Pan Pasta with Lemon, Spinach and Garlic (GF)
Ingredients
- 2 tbsp extra virgin olive oil
- 4 cloves garlic minced
- 1/4 lemon sliced thin
- red pepper flakes to taste
- 12 oz gluten-free spaghetti I used Jovial Foods
- 1.5 cups spinach chopped
- 1 tsp celtic salt
- 1/2 cup fresh basil chopped
- 2 lemons juiced
- 4.5 cups filtered water
Instructions
- Add olive oil, garlic, sliced lemon and red pepper flakes to a large pan on the stove over medium high heat. Sauté until the lemons begin to caramelize and the garlic is fragrant.
- Add the additional ingredients. Once boiling, stir and move around the ingredients. Stirring consistently, cook according to package directions. For me, this was about 12 minutes.
- The pasta will be finished when the water has nearly all evaporated and creates a starchy sauce.
- Season with salt and pepper, and garnish with red pepper flakes, basil and olive oil.
