Organic Chicken Nuggets
These homemade chicken nuggets are close to my heart, filled with memories of cooking for my little sister when she was younger. I still remember the joy of us snacking on them together—it’s a recipe that truly ignited my passion for cooking. Not only are they incredibly delicious, but they’re also packed with wholesome nutrition and flavor and perfect as a finger food for your next dinner party. I’m so excited to share them with you, and I know they’ll bring the same warmth and happiness to your table.
Here’s what you’ll need:
Ground Chicken Mixture:
1 lb organic pasture raised ground chicken
2 organic eggs beaten
1 tsp salt
1 tsp black pepper
Breading Ingredients:
4 millet crackers, pulsed (you can also use rice flour, coconut flour, or your fav GF cracker)
1 tsp salt
1tsp pepper
1 tsp of smoked paprika,
1/2 tsp of each herb (oregano, rosemary, garlic powder, onion powder)
Step-by-step:
1. In a large bowl, combine 2 organic eggs, 1 lb organic ground chicken, a pinch of salt, and a pinch of pepper. Mix thoroughly until well combined.
2. In a food processor, blend 4 millet crackers until they reach a breadcrumb consistency. Transfer to a separate bowl and mix in a pinch of salt, a pinch of pepper, 1 tsp paprika, and 1 tsp mixed herbs.
3. Scoop spoon-sized portions of the ground chicken mixture and roll them in the breadcrumb mixture, ensuring each piece is evenly coated. Set aside and repeat until all the mixture is used.
4. Heat Shayna’s Kitchen Ancient Olive Oil in a pan over medium heat. Add the chicken nuggets and cook until golden brown, turning as needed for even cooking.
5. Once cooked through and crispy, transfer the nuggets to a platter.
6. Serve with homemade ketchup and enjoy!
