Dressings (two options):

Herbed Nut & Seed Dressing:

  • 1/2 cup organic apple cider vinegar
  • Lemon zest
  • Salt & pepper to taste

Tahini Lemon Dressing:

  • 2 heaping tbsp organic tahini
  • 1/2 organic lemon, squeezed
  • 1/2 cup water
  • Salt & pepper to taste

Step-by-step

  1. Prepare the Pumpkin & Leeks:
    • Preheat the oven to 400°F (200°C).
    • Toss the cubed pumpkin and sliced leeks with Shayna’s Kitchen Ancient Olive Oil, salt, and pepper.
    • Spread evenly on a baking sheet and roast for 25-30 minutes, or until tender and caramelized.
  2. Cook the Lentils:
