Scrumptious Oat Free Granola Bars – Great For A Travel Snack

Filled with amazing, healthy ingredients, my oat-free granola bars will have you feeling satisfied and ready to take on the day!

Ingredients:

  • 1 1/2 cups Raw Almonds
  • 1 cup Raw Pecans
  • 1/2 cup Raw Hemp Hearts
  • 1/2 cup Raw Pumpkin Seeds
  • 3 tablespoons coconut oil, or I prefer Moroccan culinary Argan Oil
  • 1 teaspoon Alcohol-free Vanilla extract
  • 1 teaspoon Cinnamon
  • 1 cup Raw honey
  • 1 cup Coconut Flakes
  • 1/3 cup Goji berries

Instructions:

  1. Preheat oven to 350°F
  2. In a food processor, pulse raw almonds, pumpkin seeds, hemp hearts, and pecans until broken down into small pieces.
  3. Place the mixture in the bottom of a small bowl. add in cinnamon and set aside
  4. On a small saucepan on low heat, place raw honey, and Moroccan Argan Oil. stir well until its melted.
  5. Remove from heat and add in vanilla extract, mix well.
  6. Add melted honey into the nut mixture. Drizzle a little more Moroccan Argan Oil on top as needed.
  7. Add coconut flakes, and goji berries and mix until evenly combined.
  8. Line a small baking dish with parchment paper and spread mixture evenly.
  9. With your hands, press down and squish the mixture until it is as compressed as possible in the pan.
  10. Place pan in the oven and bake for 25 minutes.
  11. Remove from oven and let sit for 20 min before cutting into bar size pieces.
  12. Store in a container for up to 2 weeks in the fridge.
