One of my 2020 resolutions is to waste less. I save the odds and ends of the vegetables I cook with throughout the week and toss them all into a big pot to make my own broths. As we all know, most great soups start with a good base of broth and with soup season in full swing, I know you’ll love making your own vegetable broth! Here’s the recipe of what I had on hand tonight:

Vegetable Broth From Scratch
Ingredients
- parsnips
- celery root
- broccoli
- kale
- carrots
- onion
- garlic
- ginger
- lemon
- lime
- thyme
- sage
- tarragon
- oregano
- holy basil
- pineapple basil
- kombu
- wakame
- cinnamon stick
- star anise
- celtic salt
Instructions
- Toss all of your ingredients into a large soup pot.
- Fill with water until all ingredients are submerged.
- Simmer for 2-8 hours. The longer you simmer, the more flavorful the broth.
