Vegetable Broth From Scratch

One of my 2020 resolutions is to waste less. I save the odds and ends of the vegetables I cook with throughout the week and toss them all into a big pot to make my own broths. As we all know, most great soups start with a good base of broth and with soup season in full swing, I know you’ll love making your own vegetable broth! Here’s the recipe of what I had on hand tonight:

  • parsnips
  • celery root
  • broccoli
  • kale
  • carrots
  • onion
  • garlic
  • ginger
  • lemon
  • lime
  • thyme
  • sage
  • tarragon
  • oregano
  • holy basil
  • pineapple basil
  • kombu
  • wakame
  • cinnamon stick
  • star anise
  • celtic salt


  • Toss all of your ingredients into a large soup pot.
  • Fill with water until all ingredients are submerged.
  • Simmer for 2-8 hours. The longer you simmer, the more flavorful the broth.
