Easy Avocado, Tomato and Greens Toast
- 3 slices gluten free bread
- olive oil to taste
- 1/8 cup pecorino cheese
- 1 avocado sliced
- 1/4 cup cherry tomatoes halved
- Large handful greens and sprouts of choice
- 1 tbsp each fresh dill and parsley chopped
- Salt pepper and cayenne to taste
- Toast your bread slices and drizzle olive oil. Layer the pecorino cheese, avocado, tomatoes, greens, sprouts and fresh herbs. Drizzle with more olive oil and season with salt, pepper and cayenne to taste.
