This banana pancake recipe is not only a tasty and healthy alternative to traditional pancakes, but it's also ideal for those who are gluten intolerant or following a gluten-free diet. Ingredients
  

  • 2 very ripe bananas mashed
  • ½ cup teff flour
  • ½ cup almond flour
  • 1/2 cups rice
  • ¼ cups tapioca flour
  • 2 organic eggs
  • 1 tablespoon coconut sugar
  • Pinch of salt
  • 1 Tsp baking soda
  • 1 Tablespoon coconut oil

Instructions
 

  • Mash the banana in a bowl until mushy.
  • Add all other ingredients and mix well. Turn your pan on medium low heat and add a small amount of additional coconut oil to your pan. Ladle the pancakes in and cook until golden brown on each side.
  • Top with your favorite toppings and enjoy. (I used diced banana, bee pollen, almond butter and maple syrup😊)
