As someone who loves to start my day with a nutritious and delicious meal, I’ve been on the hunt for the perfect gluten-free pancake recipe, and I’m thrilled to say that I’ve finally made it. This banana pancake recipe is not only a tasty and healthy alternative to traditional pancakes, but it’s also ideal for those who are gluten intolerant or following a gluten-free diet. The combination of ripe bananas, eggs, and gluten-free flour creates the perfect balance of flavor and texture. Ingredients

  • 2 very ripe bananas mashed
  • ½ cup teff flour
  • ½ cup almond flour
  • 1/2 cups rice
  • ¼ cups tapioca flour
  • 2 organic eggs
  • 1 tablespoon coconut sugar
  • Pinch of salt
  • 1 Tsp baking soda
  • 1 Tablespoon coconut oil

Instructions

  1. Mash the banana in a bowl until mushy.
  2. Add all other ingredients and mix well. Turn your pan on medium low heat and add a small amount of additional coconut oil to your pan. Ladle the pancakes in and cook until golden brown on each side.
  3. Top with your favorite toppings and enjoy. (I used diced banana, bee pollen, almond butter and maple syrup😊)
