Gluten-free | low carb, chewy chocolate chip cookies
Ingredients
- 1/2 cup hazelnut meal or flour
- 1 free range egg, room temperature or (flax egg for vegan)
- 2 tablespoons vegan milk, rice, almond, coconut, etc (if the dough is to dry add more)
- 1 cup creamy organic almond butter
- 1 tablespoon vanilla extract (I like alcohol free)
- 2 tablespoons honey, agave, or 1/2 cup coconut sugar
- A pinch of Celtic salt
- 1 tablespoon cultivated sheep’s butter or ghee, (melted) ** you can also substitute with coconut oil or any other oil
- 2 scoops marine collagen
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon Cinnamon
- 1/2 bar of @hukitchen almond butter chocolate bar, chopped into small pieces
Directions;
1. Turn oven on to 350F
2. Whisk the egg, almond butter, and ghee in a bowl. Add in all other ingredients except the chocolate. Mix well.
3. Fold in the chocolate. Scoop small balls onto a baking sheet covered with parchment paper. Bake for 12 min or until golden brown. Enjoy!
** You can also use GF flour mix or almond flour if you have a hazelnut allergy, but I highly recommend using hazelnut, because of its flavor and also the low carb content.
