Homemade Loaded Breakfast Burrito

Ingredients
  

  • 4 eggs scrambled
  • Hash browns recipe on shaynaskitchen.com
  • 15 oz can black beans drained and rinsed
  • 1 lime juiced
  • Salt to taste
  • 1 avocado
  • 1 jalapeno sliced thin
  • 3 burrito-sized Siete tortillas
  • Salsa
  • Onion aioli recipe on shaynaskitchen.com

Instructions
 

  • Crack eggs into a small bowl and add a small amount of olive oil. Whisk until light and airy and uniform in color. Heat a pan over medium high heat and add the eggs to the center. Reduce the heat to medium-low and wait for the edges to set. Using a spatula, push the eggs from one side of the pan to the other. Cook until until you reach your desired done-ness.
  • In a separate skillet, warm the rinsed beans with the lime juice and salt.
  • Warm the burrito tortillas to make them pliable.
  • To make your burrito, layer in the onion aioli, cooked scrambled eggs, hashbrowns, warmed beans, sliced avocado, salsa and jalapeƱo.
  • To roll, push ingredients towards one side of the tortilla, tuck in the left and right sides before finishing the roll.
