Homemade Purple Potato Salad


For the potato salad:

  • 2 lbs purple potatoes
  • 2 celery stalks diced
  • 1/4 cup chopped parsley
  • 1/4 cup chopped tarragon
  • 1/4 cup chopped dill
  • 2 stalks green onion chopped and separated (white and green parts)

For the dressing:

  • 1 cup mayonnaise
  • 1/4 cup Dijon mustard
  • 1 tsp celery seed
  • 1 teaspoon cayenne
  • 1 tbsp vinegar apple cider or any light vinegar
  • 4 small cloves garlic
  • 1 lemon juiced
  • Salt and pepper to taste


  • Boil potatoes until tender, about 20 minutes. Do not overcook or they will get mushy.
  • Drain potatoes from water, and rinse with cold water and let cool slightly.
  • Cube the boiled potatoes into bite sized pieces.
  • Add the cubed potatoes to a large mixing bowl. Add in celery, chopped herbs and the white part of the green onion. Mix well.
  • In a small bowl, add together the dressing ingredients and whisk until combined.
  • Drizzle the dressing over the potatoes and stir to mix. Top with the chopped green part of the green onion. Chill until ready to serve.
