Meal Prepped Salads with Herbs, Quinoa, Feta and Arugula

Ingredients
  

  • The ingredients listed above make one salad. If you are making more you can double or triple this recipe based on how many days you’d like to prep.
  • Cook quinoa according to package directions. Remove from heat set aside and fluff.
  • In mason jars add ingredients in layers— I tried to put ingredients that wouldn’t get as soggy towards the bottom.
  • The ingredients are listed in order of what I found to be best when creating. Stop after the pinch of salt to whisk using a small whisk or fork to mix the dressing. Then begin layering in ingredients to the mason jars.
  • Enjoy immediately or store in the fridge for a few days for a grab and go meal.
