Chicken One-Pan Dinner

Want an easy nutrient-dense, protein packed one-pan meal? This chicken pan dish is quick and easy to make, packed with flavor, and a staple in my house for dinner recipes after a long day of work.

Ingredients
2 chicken breasts or any parts of the chicken.
1 large onion, diced
2 garlic cloves, minced
1/2 teaspoon rosemary
1/2 teaspoon oregano
1/2 teaspoon sage
1/2 teaspoon thyme
1/8 teaspoon cayenne pepper
2 purple potatoes, diced
3 kale leaves, stems removed and chopped
2 cups of rice
4 tablespoons of extra virgin olive oil
1/2 cup white or red wine organic or biodynamic wine.

Instructions
1. Oil your pan with your favorite extra virgin organic olive oil.
2. Add chicken breast in the pan to sear on one side and add your seasonings
3. Flip and repeat the seasoning process.
4. Once chicken is golden brown on both sides, remove the chicken from the pan and use the leftover sauce to cook your onions and potatoes.
5. Add in your rice and wine, mixing everything as it simmers.
6. Add in your kale and filtered water and once the kale is wilted, add your chicken back into the pan to finish.
7. Cover your pan for 15 minutes until water has absorbed and your dish is complete!
