Healthy Chocolate Energy Balls
Ingredients
- 1 cup coconut pulp
- 1/2 cup walnut pulp
- 1/2 cup almond pulp.
- **Use pulp from pecans walnut, almonds, and coconut ( I used this after I made my nut milk). If you don’t have pulp, you can use flours instead.
- 2 tbsp melted coconut oil
- 1/3 cup almond butter warmed up
- 1 tbsp agave
- 1/8 cinnamon
- 1/16 tsp pumpkin pie spice
- 1/2 tbsp alcohol free vanilla extract
- Pinch of Celtic salt
- 2 scoops of @withinus marine collagen
- 1 cup of melted chocolate with 2 TBSP of coconut oil
Instructions
- Add the coconut oil, almond butter, and agave into the bowl. Mix well with spoon or hands
- Add the cinnamon, pumpkin pie, and alcohol free vanilla extract, and salt
- Add two scoops of withinus marine collagen
- Roll it into bite sized balls and place them on parchment paper on a cookie sheet
- If it’s not sticking together, just add more coconut oil or almond butter to make it more wet.
- To heat up chocolate, boil water in pan and place bowl chocolate above water to melt chocolate. Once the chocolate is fully melted, turn the heat off
- Coat all balls in chocolate and place on parchment sheet
- Refrigerate to let harden before eating.
