Homemade Loaded Breakfast Burrito

Ingredients
- 4 eggs scrambled
- Hash browns recipe on shaynaskitchen.wpengine.com
- 15 oz can black beans drained and rinsed
- 1 lime juiced
- Salt to taste
- 1 avocado
- 1 jalapeno sliced thin
- 3 burrito-sized Siete tortillas
- Salsa
- Onion aioli recipe on shaynaskitchen.wpengine.com
Instructions
- Crack eggs into a small bowl and add a small amount of olive oil. Whisk until light and airy and uniform in color. Heat a pan over medium high heat and add the eggs to the center. Reduce the heat to medium-low and wait for the edges to set. Using a spatula, push the eggs from one side of the pan to the other. Cook until until you reach your desired done-ness.
- In a separate skillet, warm the rinsed beans with the lime juice and salt.
- Warm the burrito tortillas to make them pliable.
- To make your burrito, layer in the onion aioli, cooked scrambled eggs, hashbrowns, warmed beans, sliced avocado, salsa and jalapeño.
- To roll, push ingredients towards one side of the tortilla, tuck in the left and right sides before finishing the roll.
