Ingredients

  • 4 eggs scrambled
  • Hash browns recipe on shaynaskitchen.wpengine.com
  • 15 oz can black beans drained and rinsed
  • 1 lime juiced
  • Salt to taste
  • 1 avocado
  • 1 jalapeno sliced thin
  • 3 burrito-sized Siete tortillas
  • Salsa
  • Onion aioli recipe on shaynaskitchen.wpengine.com

Instructions

  1. Crack eggs into a small bowl and add a small amount of olive oil. Whisk until light and airy and uniform in color. Heat a pan over medium high heat and add the eggs to the center. Reduce the heat to medium-low and wait for the edges to set. Using a spatula, push the eggs from one side of the pan to the other. Cook until until you reach your desired done-ness.
  2. In a separate skillet, warm the rinsed beans with the lime juice and salt.
  3. Warm the burrito tortillas to make them pliable.
  4. To make your burrito, layer in the onion aioli, cooked scrambled eggs, hashbrowns, warmed beans, sliced avocado, salsa and jalapeño.
  5. To roll, push ingredients towards one side of the tortilla, tuck in the left and right sides before finishing the roll.
