Matcha French Toast with Matcha Maple Glaze
Classic French Toast gets an update from a delicious Matcha Maple sauce. My recipe is so delicious, easy to make and perfect for breakfast or brunch. I’ve been making this for so long, I’ve really perfected this dish and can have it on the table in minutes. I used a gluten-free bread from my local store but recommend any sweeter gluten-free option; just make sure to cut your slices thick! And don’t miss out on the sauce… there is something SO special about this rich, warm and delicious matcha sauce that will have you and your guests coming back for seconds (or thirds, no judgment!)
Ingredients
- 4 large thick slices of gluten-free bread
- 2-3 eggs depending on size
- 1 tbsp maple syrup
- 1 tbsp alcohol-free vanilla extract
- 1/8 tsp ground ceylon cinnamon
- 1 tbsp Morning Ritual matcha
- Ghee to grease the pan
- 1 cup almond milk
- 2 tbsp arrowroot powder
- 1 tbsp maple syrup
- 1/2 tbsp Morning Ritual matcha
Instructions
- Whisk together the eggs, maple syrup, vanilla extract and cinnamon in a wide, but shallow bowl. In a different, small bowl, sift in matcha and whisk with a bit of water until frothy and free of clumps. Add whisked matcha to the egg mixture and whisk until combined.
- Coat slices of bread in mix until completely covered.
- Heat ghee in a pan over medium heat and add in French toast slices.
- Cook slices until golden brown, then flip to cook the other side.

In a small sauce pan, add almond milk, arrowroot powder, maple syrup and whisk until combined and syrupy. In a small bowl, whisk 1/2 tbsp of matcha with water until smooth and frothy and whisk in to the sauce. Stir until thick.
- Once the French toast is finished, serve warm with sauce.
