Not So Italian – Matcha Tiramisu

Every morning, my day begins with a comforting ritual of sipping on my favorite matcha latte. It’s become my daily dose of joy, hence why I called it my Morning Ritual Matcha. As Christmas approaches, I wanted to infuse the festive spirit into my matcha moments. So, I decided to transform my morning delight into something extra special – a Christmas Matcha Tiramisu! Because who says matcha should only be sipped? Join me in adding a dash of holiday magic to your matcha experience. Let’s make this Christmas even more special and create a dessert that’s as heartwarming as the season itself!

INGREDIENTS
5 egg yolks
1 tbsp morning ritual matcha (a little extra for dusting the top)
1 1/2 cups almond milk or milk of your choice
1/2 cup coconut sugar
1 tbsp vanilla extract
1/4 tsp salt
1/3 tsp cinnamon
2 (8 oz each) mascarpone cheese, chilled
1 3/4 cups heavy cream, chilled
12 organic hard ladyfinger cookies

INSTRUCTIONS

  1. Whisk together the almond milk, matcha, and vanilla in a bowl; set aside.
  2. Using a mixer or hand mixer, beat the egg yolks and sugar until pale and thick, about five minutes. (Tip: You can also place it over boiling water to melt the sugar and make it peak faster.)
  3. Add the salt, mascarpone cheese, and continue to whip until smooth.
  4. In a separate bowl, add the chilled cream and whip it into a whipped cream consistency.
  5. Mix the mascarpone cheese mixture and whipped cream in the same bowl, folding them together until well mixed. Set aside.
  6. Dunk each ladyfinger in the matcha mixture to absorb the liquid and start lining a 7 x 11 (or whatever size you have) baking dish with the cookies.
  7. Add a thin layer of the mascarpone mixture to the bottom of the dish.
  8. Add the first layer of cookies and top with half of the whipped mascarpone mixture, using the back of a metal spoon to spread it into an even layer. Dust with matcha powder.
  9. Repeat for another layer and finish by dusting with matcha powder on top. Cover with plastic wrap and chill for at least two hours before serving.
