Perfectly Seared Salmon with Spring Herb Sauce
A nourishing, elegant dish with bright seasonal flair
Ingredients (Serves 1–2)
- 1 wild-caught salmon fillet (about 6–8 oz)
- 2 tbsp chopped fresh parsley
- 4 tbsp high-quality olive oil (Shayna’s Kitchen Olive Oil, ideally!)
- 1 tsp Dijon mustard
- 1 tbsp pure maple syrup
- 1 tsp lemon zest
- Juice of ½ a fresh lemon
- Mineral salt and cracked pepper to taste
- A few thinly sliced radishes, for garnish
Instructions
Prep the Salmon
Prep the Salmon
- Rinse the salmon and pat it dry with a clean towel.
- Drizzle with 2 tbsp olive oil and season with mineral salt and freshly cracked pepper.
Sear to Perfection
- Heat a cast iron skillet over medium-low. Add 2 tbsp olive oil, ghee, or coconut oil.
- Once hot, place the salmon skin-side down in the pan. Cook undisturbed for 4–5 minutes.
- While it cooks, combine the sauce ingredients: olive oil, Dijon, maple syrup, parsley, lemon zest, lemon juice, salt, and pepper. Whisk until emulsified.
- Gently flip the salmon and cook another 3–4 minutes. If the fillet is thick, cover the pan with a lid for the last 2 minutes to ensure even cooking.
Finish & Garnish
- Let salmon rest for a moment. Drizzle with the Spring Herb Sauce and top with fresh radish slices.
