With Christmas around the corner, it’s the ideal time to create some delightful new recipes for you. This one is sure to steal the show on your Christmas table—a perfect dip that will surprise your guests. The combination of sweet potato and spices is simply amazing. 2 cups of sweet potato
One head of garlic
Olive oil and salt
1 15-ounce can of cannellini beans, mostly drained
Juice from one lemon
1/4 cup olive oil (more as needed for blending)
2 tablespoons maple syrup
1 1/2 teaspoons salt
1 teaspoon smoked paprika
1 teaspoon cumin
Half a teaspoon cinnamon
A teaspoon of cayenne (adjust to your spice preference)
Pepper to taste
For garnish (optional): more olive oil, fried sage, and pomegranate seeds
Preheat oven to 400°F. Slice the top off of the garlic, exposing the cloves. Drizzle olive oil over the potato and garlic, and season with a little salt.
Roast for 30 to 35 minutes, until tender.
In a blender or food processor, combine all ingredients and blend until completely smooth.
Top with your favorite garnishes and serve with bread or as a side dish for any main.
